“What are Microgreens?”

“So they are Sprouts?”

Sort of…. Sprouts are grown in water and harvested after 3-4 days, just after the germination stage before the plant start to grow leaves. The seeds are consumed with the sprout. Microgreens are grown in soil or other medians and are not harvested until the True Leaf starts to grow (6-14 days). At this stage the plant is at it most flavorful and nutritious. They are popular as a garnish but offer quite a flavor burst when eaten. If allowed to continue to grow it would turn into a fully mature vegetable popping out peas, broccoli or whatever you planted.

“So why not just let it grow to baby greens or a radish?”

Very fair question and its the path most farmers take. We harvest when we do because it is at this stage where the seed is only growing under its own stored energy. They grow without added nutrients or products and only use what is already in the seed. Beyond the microgreen stage, plants need more attention and guidance. Where some turn to pesticides or growth chemicals we never have the need. The land needed to grow can be substantial. Microgreens can be grown millimeters from each other in trays of hundreds and thrive. After this stage you would need a field to plant them all. Add in the calendar seasons needed to harvest one crop and the idea of year round sustainability goes out the window. This is why much of our industrial food is grown in different parts of the world and shipped depending on the time of year. Our Microgreens are grown indoors in a fully climate controlled sterile environment eliminating the need for toxic chemicals or questionable growing tactics.

“I’m interested, but can’t I just have a bowl of salad?”

Sure, but I hope you have a big bowl. Microgreens are naturally loaded with vitamins and other helpful goodies, 40x the amount of its fully grown sibling and they taste amazingly fresh. You would have to eat A LOT of vegetables to equal one bite of microgreens. If you have a picky child or don’t care for greens yourself, microgreens are so dense with nutrients, they can be blended into a fruit smoothie or into your families favorite sauces. Personally, my family likes to nibble at them throughout the day as a snack. With some microgreens we dip a pinch lightly in vinaigrette for an extra pop.
